SJ & Livio's Favorite Tomato Sauce

So this one is obviously prettyyyyy close to my heart eheh... but I'll give it away, it's pretty simple.

You take some fresh, ripe tomatoes. (I use 2-3 depending on the size and amount of sauce I want to make)

Thinly sliced onion (but not a lot!)
Cut the tomatoes into tiny pieces, slivers, thin, however you like.a






Smash 2 cloves of garlic and put them on toothpicks, like Livio says, you just flavor the sauce with the garlic, but you don't want to actually eat chunks of it.

You saute the onion and garlic in 2-3 tablespoons of olive oil, add the tomatoes, it'll look something like this:
Then add 1/4 cup of white wine and some spices (like dried italian spices, dried oregano, basil, etc). or if you happen to have a jar of "condimento all' Ado" on hand that works great as well. I'm guessing you don't though...
Let it simmer for a while and then just add one single, solitary, can of tomato SAUCE..not paste, not diced, just the sauce. A 5-6 oz. can works perfectly. And season with salt to taste. And this means you have to taste.

Remove the garlic toothpicks and serve it with pasta, on top of salty crepes (with ham and cheese melted inside), or like my family did, on pizza! Yep that's right Livio- we DO make good pizza in America, but maybe just at the MacMillan's ;-)
