Avocado & Tuna Salad
Well spring has arrived here in Padova and with that comes running and with running comes healthy eating on my part, not that I don't always try to eat healthy but I feel particularly inspired after a good run. As I was perusing the vegetable section here at the local Despar (a grocery store in Padova) I stumbled upon some finally delicious looking, ripe avocados (usually they are rock hard since they come all the way from South America). As I realized it's been TOO LONG since I've had some avocado, and since I used to eat it all of the time in California, I decided that I would make something delicious and healthy for lunch using this avocado.
Did y'all know how good avocado's are for you: despite being high in fat, those fats are the types that are good for you (hearth-healthy mono-unsaturated fats) as well as offering other nutrients such as vitamin E, cholesterol controlling plant sterols and potassium. They pair nicely with tuna, eggs, tomatoes, spicy mexican food, bacon (blta anyone?) the options are infinite, however I wanted to share with y'all a glimpse into my normal routine, this salad recipe isn't necessarily complicated nor does one NEED a recipe but if you are lacking in inspiration or you want to know how to start eating healthy yet delicious tasting foods, this is a good starting point. Throw together as a light lunch or dinner.
Avocado & Tuna Salad
Ingredients (serves 1 as a main course, 2 as a side):avocado (1/2 pitted)
handful of cherry tomatoes
3-4 cups of your favorite type of lettuce (preferably a milder type i.e. butter)
1 can of tuna (small 2-3oz or 75-100 grams)
sweet corn (canned is great, 1/4 cup ish but I just estimate)
salt
pepper
lemon juice
olive oil
1. Put lettuce in a medium sized bowl.
2. Slice the avocado 1/2 in a criss cross pattern and scoop out on top of the lettuce.
3. Slice the tomatoes in 1/2 place on top
4. Put the corn and then the can of tuna
5. Salt and pepper as desired
6. Squeeze the juice of 1/2 of a lemon and 2-3 tsp of olive oil
and that's how simple it is! Enjoy!
